The company Giannelli was born as a point of sale specializing in meat. In addition to fresh meat, it offers a small variety of cold cuts produced from 100% Italian meat. The company’s "mission" is based on a simple concept: the production of cold cuts without preservatives. No chemical expedients are used, which are replaced by natural elements such as honey, wine, garlic and sweet pepper. Each of these components has a specific property that helps to make the sausage microbiologically stable and safe over time. Honey is used as an acidifier, as it lowers the pH, wine, garlic and sweet pepper are excellent antibacterial and antioxidants. Today, industrial production optimizes the processes to increase the quantity, using adjuvants in the preparation of cured meats, at the expense of quality. We say NO to the E300, to the E250 and to all the elements synthesized chemically, but we say YES to all their natural equivalents. In addition, the rediscovery of ancient recipes, dating back to before 1920, the year in which the properties of nitrate were discovered, has helped a lot in the preparation of cured meats without chemical preservatives.
