Bacon stuffed lamb is a typical preparation of the Monti Dauni that is cooked especially near the Easter holidays.

This is also a poor dish, the ingredients are in fact only lamb, eggs and depending on the taste tomato sauce or seasonal vegetables.

For the preparation it is necessary to put a pocket in the bacon that is to be filled with egg, parsley, salt, pepper, pecorino cheese, garlic and then it must be sewn so that the filling does not escape during cooking.

The bacon filled once blended with white wine and seasoned with tomato sauce should be cooked over low heat and then cut into slices before being served.
